AI taking ammo and weapons from player vehicles

nope, thats builtin ARMA 2 behaviour. If they do, and the gear was valuable, shoot em to get it back .-)

There isn't a way to stop this unless a mod for DayZ that is PvP adds the feature that is included within Arma II Citylife where you can lock your vehicle to prevent someone stealing the gear inside of it.

One way to prevent this is future would be to hide the vehicle more discreetly to ensure that no-one will find it and take your guns/ammo.
